Make coconut water pudding at home to beat the heat

If the scorching heat has you craving something cold, try making coconut water pudding at home. It comes together with little time and effort. The recipe is from chef Afsana Mimi.

Ingredients

2 cups coconut water, 1 cup coconut flesh (cut into small pieces), sugar to taste, and 1 tablespoon agar agar powder.

Method

First, thoroughly mix the coconut water, sugar and agar agar powder together in a pot. Heat over medium flame for 3-5 minutes, stirring continuously, until the agar agar has fully dissolved. Remove from heat, and once slightly cooled, mix in the coconut flesh. Pour the mixture into a mold or bowl of your choice and let it sit at room temperature for a while. Then refrigerate for 2-3 hours. Once the pudding has fully set, remove it from the mold and serve chilled.
